Pulled Braised Beef Short Rib in Peking Duck pancakes

Ingredients

 1.5kg Slab of Beef short ribs – Bone in

Braising Sauce:

  • 100g Butter
  • 1 X Sliced Onion
  • 1 x Tbsp Grated Ginger
  • 4 x Tbsp Crushed Garlic
  • 2 x tsp Chinese 5 spice
  • 60ml Soy Sauce
  • 60ml Asian BBQ sauce
  • 60ml Hoisin Sauce
  • 1 x tsp Brown Sugar
  • 1 x Cinnamon stick
  • 2 x tsp ground coriander
  • 250ml Chicken/vegetable stock
  • 1 x red chili – deseeded and finely chopped.

How To Do It

Take a decent outdoor pan, I used my De buyer 30cm outdoor pan. Grab your fire tripod, ensure enough coals for sufficient heat. Melt the butter and fry the onions, Garlic and Ginger. As the onions start getting soft, add your chili, spices and let those flavors blend for around 4min. Then add the Soy, Hoisin and BBQ sauces. Simmer for a couple of minutes and then add your liquid stock and cinnamon stick. Mix properly, reduce coals/heat and let simmer for a while.

Beef Short Rib – Make sure you have enough charcoal in your weber for indirect cooking method for 4 hrs. I lit my kettle fire before I started the Braising sauce cook on the open fire.

How is that colour?

Now take you room temperature Beef Rib and sear it properly on all 4 sides. Once seared, place in tinfoil pan in the indirect position. Insert your meat thermometer and decant your braising liquid over the Beef Short Rib. Cover and seal in tinfoil. Cook for around 4 hours or until you reach an internal temp of 95degrees, fall off the bone meat. Rest for 20min.

Open, remove bones (with ease) and pull the beef in the juices that remain. There is the flavour explosion……That braising sauce.

Now take some thinly cut cucumber, sliced salad onions, some hoisin sauce and some pulled beef short rib, roll it in a pancake and enjoy.

Ranger Tips

When wrapping your now seared Beef Short Rib in tinfoil, ensure there is enough space for the meat to expand. Otherwise, the meat will tear through the tinfoil and all moisture will escape.
