How To Do It

Bacon wrapped cheese stuffed onion rings – This was a game changer.

Grab the biggest onions at your local fruit & veg store. Slice in 1cm thickness from the center of the onion outwards.

Separate the individual rings and remove every second ring, leaving enough space to insert some evenly cut cheddar (or similar cheese). Tightly wrap your stuffed onion rings in the bacon.

Place your rings indirect heat on the Weber at 165degree ambient temp and braai till bacon is nice and crispy.

The Smash Burger

The legendary smash burger has been under the spotlight lately, for various reason, bottom line is this is an amazing cooking technique, originated in the USA and is popular globally. As always, your butcher knows best so ask them for ground beef with a 70/30 ratio meat to fat.

Mix the spices & Worcestershire Sauce into the beef – But do not kneed the beef, lightly mix, make ‘meat balls’ of around 80/100g each and rest in the fridge.

Prep – Slice the following into thin slices to add to you Burger:

  • Tomatoes
  • Lettuce
  • Gherkins

Place the gas flat top on high. Add a bit of olive oil and brown/toast your burger buns.

Prep you Burger buns prior as you want to eat this smash burger as it comes off the braai. Mayo on one side and chutney on the other of each bun.

Remove ‘meat balls’ from fridge and place onto hot flattop, adding salt and smash them to a reasonable patty. Make use of parchment paper so that your spatula does not stick.

Grill for 60 seconds and flip. Add your cheeses, grill for 40 seconds, remove and add to pre prepared burger bun. Add the Bacon Wrapped Onion Rings and in the center of your onion ring, add a generous amount of Onion Relish.

Ranger Tip

The hotter your flat top is the better. For a decent smash burger you want to achieve that flavour crust.
